I will often make this in bulk at home and eat it through the week. I found this is also good when you are having a sweet craving and want to have something other than processed sugar or fat.

- 2 cups Raisans Golden looks nice
- 3/4 cup Mayonnaise Fat Free, Lite, or whatever

This is a simple recipe and so delicious and nutritious. Raw vegetables and fruits provide the best source of vitamins, amino acids and any other benefits of the vegetable.
Combine the ingredients listed in a large bowl thoroughly. This is something best made in advance and let sit before serving.
I have seen other recipes suggesting you add honey, sugar or other thing to augment the flavor. I really do not think it is needed. The natural sugars in the carrots will sweeten the salad.
