Broccoli Salad (Sweet)

This is a great side dish for a picnic or family dinner. The benefit of this is that it can be served over a week's time because of the staying quality of the mayonnaise. It is very nutritious and provides vegetables in their raw, healthiest state.

Servings

Ingredients

  • 1 pound Crowns of Broccolli Including stalks
  • 1 pound Carrots
  • 2 cups Raisans Golden work nicely too
  • 2 cups Mayonnaise or dressing
  • 1 pinch Salt to taste

This is a salad I will usually make for a week worth of eating because it stores nicely and just continues gaining flavor. This is the sweeter version that will go well with a fish, chicken or even better –  fried chicken.

Place cleaned broccoli, carrots and apples* through a shredding food processor or grate them with a small grate and chop the rest into small bits.

Place ingredients into large mixing bowl, should be much larger than needed. Combine all ingredients in the same bowl and toss. Taste and add salt as needed; but this is a recipe that improves if it sits overnight.
