Broccoli Salad (Savory)

This is a salad I will usually make for a week worth of eating because it stores nicely and just continues gaining flavor.

Servings

Ingredients

  • 1 pound Brocolli Including stalks
  • 1 pound Carrots
  • 1/2 Small Pourple Onion Diced Small
  • 1.5 cups Mayonnaise or dressing
  • 4 ounce Hot Horseradish Flavor Option
  • 1.5 cups Roasted pine nuts (or soy nuts) Flavor Option
  • Salt to taste About a Tsp
  • 2 clove Garlic Clove Chopped fine

Directions

Serves 20+ People

Put cleaned broccoli and carrots through a shredding food processor or grate them with a small grate and chop the rest into small bits. Place into large mixing bowl, should be much larger than needed. Combine all ingredients in the same bowl and toss. Taste and add salt as needed; but this is a recipe that improves if it sits overnight.
