Asparagus Salad (w/ Bacon)

I love this salad. The first time I made it for myself I ate the whole salad in one sitting. It can be served warm and still taste great as a side dish.

Servings

Ingredients

  • 1 pound Asparagas
  • 1.5 cups Chopped Bacon
  • .5 cup Onion Small Dice
  • pinch Salt
  • pinch Pepper Fresh Ground
  • .75 cup Mayonaise

Run the Asparagus through a food processor if you can to slice it down into even cuts.

In a saute pan, heat Olive Oil.

Add Onions and seasonings (Salt and Pepper) and saute until onions start to become glassy.

Add Asparagus and Bacon and continue to saute until Asparagus is done. Do not over cook! The Asparagus should be bright green and still have some life in it when ready; which means it still retains a little crunch when biting into it. If the vegetable starts turning a dark green it is typically over cooked.

Set aside and cool.

Once cooled, in a bowl add Asparagus mixture and Mayo and stir. There will be some creaminess to it when done. This can be served warm or cold.

This is a really good salad with some seriously mind blowing flavor. I tried it warm and cold and liked both a lot.

However, with many of my salads when you let it sit for a while the flavor just explodes. Try it out and let me know what you think!
