republic KITCHEN + BAR in Henderson

These days when I eat out I have to take advantage of the occasion because lately my wanderings have been letting me have access to some interesting spaces and places. ‘republic KITCHEN + BAR’ has been around six months just off Eastern Ave and a mile or so into Henderson from the 215 Fwy. [9470 S. Eastern]

The restaurant is beautifully decorated and has a very comfortable atmosphere. I went in not knowing what to expect, having heard nothing of the place before, but was there sharing a birthday celebration with a friend. Their menu was creative and smart, so I would be very encouraged to return had I just based everything on that.

Thinking it was strange that I had heard nothing of the place before I brought up their reviews on FourSquare.Com and discovered something there that confirmed an experience I had by that point as well. The service was painfully slow.

I was given a menu as soon as I sat down and they had a very nice list of spirits. I took my time going through the list of beers because I love good beer. When I finally made my choice I engaged the other guests in conversation. So much time had lapsed when the waiter finally returned I forgot what I wanted. I picked another and regretted it immediately because it was not what I wanted – *sigh*. None the less the beer was tasty and as I waited again – menu in my grip – I waited to order something to eat.

Buffalo Chicken BitesI gave up… I really gave up on eating at all. A friend next to me was starving and he asked if I would share something with him and after flagging down the waiter by waiving the menu through the air we ordered an appetizer: Buffalo Chicken Bites.

What do you think of when you see “Buffalo Chicken Bites” on a menu. Me? I imagined fried out cubes of chicken (or fo-chicken????) doused in some crappy spicy sauce. But read the menu a little closer and there is this righteously intriguing nibble with – *gasp* – Maytag Blue Cheese. Oh my heaven.

Buffalo Chicken Bites InsideThe appetizer, which was all I had beside the beer that night, was fantastic. Read the menu carefully because there are a lot of treasures to be found here and I will go back. I will go back because the food has left me feeling very intrigued.

On the service issues, I had a lovely talk with the charming hostess who told me the restaurant had opened in September 2010. She showed me a book of reviews she had been keeping at the front desk and there is a good chance they are all well earned. FourSquare’s Tips section did talk about the lousy service but raved about the food. I guess I am pretty much doing the same.

La Boulange


It was as if destiny was calling! While visiting San Francisco this week I discovered the most beautiful little French bakery on Hayes.

The almond croisant called me back daily before my meetings and… of course I had to take something else with me for the day too.

This place was devine and the staff seemed stellar all the way. Delicious coffee and a great start for the day!

Flippers

When it comes to dining while traveling, especially when traveling alone, a guy just wants something simple and easy.

While walking up Hayes Street in San Fran after a day of meetings I popped into this quaint looking burger place called Flippers. There were customers inside and I did have a recommendation to try it and so I did.

I sat myself and perused a decent looking menu and as a starter I discovered they had one of my favorite salads; a blue cheese wedge. My main course was their California Flip which was the usual with avacado and sproutsm typical but whatever.

The salad was no wedge. In fact it should have arrived in a wedge or (if requested) a chopped version in ice berg lettuce. The lettuce literally looked it had been hacked.

Barely into the salad the main course arrived and the sandwich looked really good. It was cooked correctly as ordered and all seemed well.

When I looked over the plate the mayo had that glassy look like it had either been left under the heat or out too long. That was my only worry.

So I paid and headed out. Overall the experience was good. The iced tea I was given was underbrewed but I did not care much.

And finally, with some additional care I bet their brand would go nuts.

And really finally… I literally almost did not make it to the restroom on my way home. Oh mayo you almost got me.

Dumpster Diving

I was enticed when I saw the menu being a lover of fish and crab! Layed out on a bed of cabbage with crispy fried white fillets and delicious pockets of shredded crap presented oh so sumtously.

BUT what arrived was a stack of fried out tiles encased in a childs toy box. The food … wait, I called it food. Soylent green was more appitizing.

What am I talking about here? My gal pal Nacie was moving last week and wanted to grab a bite to eat. She was clamoring for Long John Silvers.

Fortunately (so to speak) there was a KFC attached to this out on Ann Road. She ordered a fish combo and I ordered a chicken breast sandwich.

Why is it food from these places NEVER resemblant or even close to what then menu looks like? Just a rhetorical question.

Seriously, the fish dinner was a pile of fried crap that had no life left in it all. Sad… yes very sad for some who appreciates food.

Without certainty the cooked out tiles of fish were probably stripped of their nutritional value.

Now let’s talk about that chicken sandwich! Let’s not. The story is very similar and sad.

Dirty Dining on KTNV

When I moved to Nevada and became involved in the Food Industry here it was my introduction to the community that the Health Department is one of the toughest in the nation. Certainly when I read the Review Journal and saw the results of inspections that were published there, it was an eye opening experience.

These days KTNV has been promoting an on-going series called Dirty Dining that has once again started shining the spot light on dirty restaurants in the valley. I can not tell you how many times I have been made sick by eating here in the city. Believe it or not, there were occasions when I saw that freight train coming at me when I entered the questionable establishment.

The Dirty Dining Report by reporter Tricia Keen has a lot of videos on their web site but what strikes me is how many of the “Dirty Diners” are ethnic, small businesses who come from cultures that have different standards than what many of us expect to see. Granted that is simply no excuse, because when you sign up to play in the game you have to play by the same rules.

Where are those reports on the big fancy hotels in the city? In my own experience working in a couple hotels in Vegas the environments are generally clean and attentive to Health Department standards. The one thing that always bothered me there is that the hotels were given advance notice of a Health Department visit and always looked very ‘friendly’ inspections (finger pushing side of nose).

I have seen some really disgusting things in some of my former work places and like me, it is up to the individual to make sure food remains safe, but some really care very little.

It is important for the consumer to be aware of what they are walking into and the Dirty Dining report serves to remind us that we are ultimately responsible for our own choices when entering an eating establishment. We appreciate these attentive details to bad practices but my concerns are there is easy prey for small businesses struggling to survive. The Review Journal also posts announcements called the Restaurant Report that provides similar detail as to the failings of food establishments which seems a little more balanced.

The Health Department of Southern Nevada is a pretty powerful organization in Las Vegas and have been invented into a resource that has become very important for a lot of Nevadans. Recent budget cutbacks have hit them hard. In some cases their authority appears to be very inflated because of I wondered how much they were inventing their own relevance in the face that so many places are allowed to get away with bad behavior while the attention seems to be selectively enforced. Las Vegas

I have been living in Vegas for almost a decade now and have experienced food on so many levels it is hard to share the range and joy of those experiences. Rarely have I experienced disappointment.

Some say the service industry in this city has died. Some say visitors have become virtually hostile toward service people.

Basically, services are generally really good in Vegas and there are some real professionals out there doing the best they can. No longer are there all the comps that used to be available at the casinos; there is a very visible bottom line that has to be met. Hotels and restaurants have bills and employees to pay.

It is still important to note some of my favorite experiences here and some of the best surprises I discovered here in a city where food is almost as important as the show you will see on the strip.

My latest favorite is Morels in the Venetian. Impeccable service and ambiance worth every penny. As I think about it, the Venetian offers some of the best quality restaurants I can say I experienced! Bouchon in the Venezia tower is heaven. Caneletto’s is also very charming in spite of being in the middle of St. Marks Square that always seems to be swarming with people. I have always been fascinated with their chef’s table that can be seen when walking past the windows looking into the kitchen.

Each have character. Each have great service. Each have knowledgeable and talented staff that make the experience divine.

There will be more to come as the future progresses, because there is a lot to offer. I am not limited to Vegas and will be talking about restaurants anywhere I go or have gone. See the review I just posted on Bar + Bistro at the Arts Factory where they got a very Luke Warm rating.

REDCarte Agenda

My name is Scott and I am adjusting this mission of this site to meet the whole picture of what I wanted to build for this site. If you have been here before, you can see there are already some big changes.

I plan on continuing with posting recipes and letting others share the site if they so choose. There is a new member element that will open up soon.

I am inspired to write about restaurants and offer some criticism from my point of view because I have worked in the industry and I do have knowledge I think is valuable.

As I move forward in working out how this site grows, I will always keep in mind that we live in a tough economy and service and quality is always the first thing to fall. For restaurants, that is the potential coffin nail leading toward a shallow grave. I don;t care how cute your restaurant is or what a nifty menu you think you have if the experience is not quality you lose.

We know a happy customer will tell 10 people and come back. We also know that an unhappy customer will tell a hundred people and never come back.

Interact and engage your customers. Make sure what is on the plate is contemporary and exciting. Seduce with the eyes even before you seduce the pallet.
