starch (stärch) n.

1. A naturally abundant nutrient carbohydrate found chiefly in the seeds, fruits, tubers, roots, and stem pith of plants, and commonly prepared as a white, amorphous, tasteless powder used in powders, ointments, and pastes. Also called amylum.
2. A food having a high content of starch, such as rice, bread, and potatoes. [source]

This kind of carbohydrate is not the demon fad diets might have you believe. In fact, served in a balanced dish it can be the healthiest thing you can eat. In Latin culture there is something called Christianos y Moros that is a fantastic peasant style cooking commonly known as rice and beans (usually black beans) that creates the perfect protein.
